Apple spice coffee cake

This is the recipe for coffee cake cake from the previous post. This cake is quick to mix and very moist. Perfect addition to post dinner treat or light breakfast.


For streusel: pulse together in food processor: 1/3 cup of flour, 1/3 cup brown sugar, 56 g soft butter, 1 tsp of cinnamon, dash of salt.
For cake:
Beat 1 stick of butter with 1 cup of sugar until fluffy. Add 2 large eggs (all products should be room temperature), adding one at a time. In a separate bowl mix together 2 cup white flour, 1 tsp baking soda, 1-1,5 tsp cinnamon, 1/8 tsp cloves, 1/4 tsp ginger and dash of salt.
Add dry ingredients to the batter alternating with 1 cup of sour cream. Beat until well incorporated.
Preheat oven to 350 F (180 C) – I bake in convection panasonic oven – so it takes 2 mins to preheat it, otherwise preheat oven right in the beginning of cooking. Butter 9 inch spring form with and line it’s bottom with baking paper and dust with flour.
Peal, core and chop apples, dust them with some flour and mix in the batter. Pour batter into spring form and bake for 40 minutes or till toothpick inverted in the center of the cake comes out clean.
